Strawberry Mango Popsicles
Time: 15 minutes prep + 6 hours freezing

Yield: 15 little Popsicles

1 1/2 lbs fresh strawberries
1/2 lime, juiced
1/3 C sugar
tiny splash of balsamic vinegar (optional, though wonderful)
dash salt
1 C vanilla yogurt
1 mango
1/4 C sugar
1/2 lime, juiced
dash salt
12 small Dixie cups
12 Popsicle sticks

 1. Cut the green tops off of the strawberries. In a small food processor or blender puree the strawberries until they are as smooth as you can get them. Add the1/3 C sugar, lime juice, dash salt and balsamic vinegar. Blend it all up until it's smooth and lovely and pour it into a small mixing bowl.
2. Cut up your mango and add it to your small food processor. Add the 1/4 C sugar, lime juice, and dash of salt. Blend it up pretty as a picture.
3. Pour just a bit of the strawberry puree into each cup. Add a dab of yogurt, and a plop of mango puree. Pour a bit of strawberry on the top. Add your Popsicle stick to the cup and give it all a bit of a stir.
4. Place in your freezer and let them set up. It should take at least hours.
