Fresh Pear Crumble Pie

Makes one pie

  • For the filling:
  • 1 cup sour cream
  • 1 Tablespoon flour
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 2-3 pears, peeled and sliced 1/4" thick. Alternatively you can use 2 cans of pears, thinly sliced, when pears are not in season.
  • For the crust:
  • 1 premade pie crust, unbaked
  • For the topping:
  • 2/3 cup flour
  • 1/3 cup sugar
  • 1/4 cup butter
  • 1/2 teaspoon cinnamon
  1. Preheat the oven to 350-f degrees. Add the pie crust to your pie plate. Poke the bottom of the crust a few times with a fork. Crimp the edges however you prefer to create a nice edge on the pie.
  2. Prepare the pear filling: In a medium mixing bowl, mix all filling ingredients except pears. Pour into the unbaked pie crust. 
  3. Peel, core, and slice the pears. Spread evenly over the top of the pie filling. The design wont batter as it will be covered by the crumb topping, so just ensure it is evenly spread across the pie.
  4. Bake for 15 minutes and remove from the oven. While it is baking, prepare the crumb topping.
  5. Crumb Topping: In a small mixing bowl, mix all topping ingredients with a fork or your fingers until crumbly. I prefer using my hands but either way works. Sprinkle evenly over the pear layer of the pie. Bake for 30-40 minutes, until set. Remove from oven and cool completely. Cover and chill. This is best served cold and would be fantastic with lightly sweetened whipped cream.
