Tzatziki / Τζατζίκι

500 gr. Greek yoghurt (full fat)
1 cucumber (about 300 gr.)
4 cloves garlic, crushed
1/4 cup olive oil
1/4 cup vinegar
3 tbsp fresh dill, chopped
juice of 1/2 lemon
salt, pepper
Kalamata olives for serving

Wash and clean the cucumber, you can leave some of the green rind if you want. Grate it, using the thick part of the grater, lightly salt and leave in a colander for about 15 minutes, putting some kind of a weight on top, to drain its liquids.
Using your palms, squeeze cucumber. In a bowl add yogurt, cucumber, dill and crushed garlic. Add olive oil, vinegar, lemon juice, salt and pepper and mix well. Taste and correct it according to your taste. Place the bowl in the refrigerator to cool for a while, garnished with some olive oil drops and Kalamata olives.
