easy apple pie recipe // Ioanna's Notebook
(for a 28 cm. pie dish)
1 refrigerated pie crust
4 medium sized apples, cubed
1 tbsp cinnamon
1 cup brown sugar
2 tbsp flour
1 tsp nutmeg

For the topping
1/2 cup flour
1/2 cup butter, softened
1/2 cup sugar

Butter a 28 cm pie dish and press the pie crust, covering the sides. In a bowl, combine sugar, flour, nutmeg and cinnamon. Toss lightly with sliced apples. Let sit 10 minutes for sugar mixture to melt onto the apples and then pour into the unbaked pie crust. 

For the topping, combine flour, butter and sugar. Mix together with fingers until crumbly and sprinkle over pie (you'll need to bake soon before the butter mixture softens too much). Bake at 200oC for 45 minutes until golden brown. Serve warm with vanilla ice cream and caramel on top.
