SPINACH, BACON & BLUE CHEESE QUICHE

INGREDIENTS
1 refrigerated pie crust
500 gr. freezed spinach leaves
3 tbsp. olive oil
1 cup sliced mushrooms
6 slices cooked bacon, cut into small pieces
1 onion, chopped
1 cup Regato cheese, shredded
1/2 cup Gouda cheese, shredded
100 gr. blue cheese, crumbled with a fork
3 eggs, beaten
200 gr. heavy cream
Salt, pepper
1 tsp nutmeg

DIRECTIONS
In a pot, over medium heat, add olive oil and spinach and let it steam. Once it begins to soften, add the onion, bacon and mushrooms. Add salt, pepper and nutmeg. Stir to combine and cook over medium heat for 10 minutes, until the mushrooms soften. Add the blue cheese, stir and remove from heat.

In a bowl, mix eggs, cream and Regato cheese. Pour the mixture over the spinach and stir to combine.

Press the pie crust into a pie dish, covering the sides. Carefully pour the spinach mixture and flatten the surface. Sprinkle with Gouda cheese and bake in preheated oven for 30-40 minutes until golden brown surface and the middle is set.

Remove from the heat and let it cool for at least 1 hour before serving.
