HEALTHY CRUNCHY CHICKEN

INGREDIENTS
500 gr. chicken breast fillets
1/2 cup olive oil
120 gr. breadcrumbs
120 gr. grated gruyere cheese (or parmesan or pecorino)
juice of 1 lemon
1 tsp mustard
Salt, pepper

DIRECTIONS
In a jar place olive oil, mustard, lemon juice, salt and pepper, close the lid and shake until all ingredients are mixed. Pour the mixture into a bowl.

In another bowl put breadcrumbs and cheese and mix. Preheat oven to 180oC.

Dip each fillet first in the mustard mixture, then in the breadcrumbs. Press each side with your hand so as to stick enough mixture. Put chicken on a plate and refrigerate for 5 minutes.

Spread a baking tray with wax paper and arrange chicken. Bake in preheated oven for about 20-25 minutes until golden brown.

Serve immediately.
