EASY GREEK CHEESE PIE

6-8 servings
Preparation: 30 minutes - Cooking: 40-45 minutes


INGREDIENTS
500 g. feta cheese crumbled
250 g. mixed yellow grated cheese (Gouda, Gruyère, Regatto)
500 g. phyllo pastry
150 g. olive oil (plus a little more for the baking dish)
4 eggs
salt, pepper
250 ml sparkling water (like Perrier, Pellegrino etc.)

HOW TO MAKE
Grease a rectangle baking dish (dimensions appr. 25x35 cm). In a bowl mix the cheese.

Lay a phyllo pastry and sprinkle the cheese mixture all over it. Then wrap it like a roll (not too tightly) and place it in the baking dish.

Repeat the same procedure for all the phyllo pastry, putting them next to each other, covering any gaps that may be created. If our end up with leftover cheese, just sprinkle it over the pie.

Preheat oven at 200oC. Pour the oil into a bowl and add the eggs. Season with salt and pepper and whisk lightly. Add the sparkling water into the mixture (caution, will foam a bit!) and pour it over the pie. Bake for 40-45 minutes, until golden.

It is better to be served warm.
