CHEESECAKE WITH FOREST FRUITS

INGREDIENTS
For the base
250 gr. digestives biscuits
125 gr. melted butter

For the cream
600 gr. cream cheese
6 tbsp icing sugar
200 gr. heavy cream

For coating
Forest fruits jam

HOW TO MAKE
Grate the biscuits in blender biscuits mix them with the butter. Put mixture into a cake platter with removable ring and push very well all its surface to be flat and even. Bake the base in preheated oven in 180oC for 10-12 minutes. Remove from the oven and let it cool.

Meanwhile prepare the cream. Beat the cheese cream until it becomes fluffy, add the icing sugar and at the end the heavy cream. Scrape the walls of the mixer with a spatula and whisk until the mixture incorporates.

Spread the cream evenly over the base and put it in the refrigerator to stabilize the cream (about 1-2 hours).

For serving, just spread the jam over the entire surface and remove the removable ring from the cake platter.

Note: Baking the biscuit base becomes fluffy and graters, you can omit this step, if you like.
