BATZINA

INGREDIENTS
500 gr. zucchini grated
250 gr. feta cheese, crumbled
1 glass fresh milk
1 glass olive oil
2 eggs, lightly beaten
4 cups flour for all uses
20 gr. baking powder
salt, freshly ground pepper
butter

DIRECTIONS
Preheat the oven at 180oC and grease a large baking dish with butter. In a large bowl mix grated zucchini, milk, olive oil, salt, pepper, cheese, eggs, baking powder and flour. Add enough flour until you have a very thick batter.

Spread the batter into the pan and sprinkle the surface of small butter pieces. Bake in preheated oven for about 40-50 minutes until golden brown.

Remove from the oven and let it rest for 5 minutes. Cut into pieces and serve.
