Preparation: 10 minutes - Baking: 90 minutes
4 tbsp balsamic vinegar
4 tbsp olive oil
8 cloves garlic, cut lenghwise
salt, black pepper
1 tsp dry rosemary
1 tsp dry thyme
Preheat oven to 180oC. Cover the bottom of a cookie sheet with foil. Cut small slits into meat and disperse chunks of cracked garlic coves into meat. Coat meat with balsamic vinegar and rub into meat. Drizzle with olive oil.
Combine salt, pepper, rosemary and thyme and rub the meat. Cover a cookie sheet with foil and bake for 1 1/2 hour. Halfway through baking, check the meat and turn it upside down. Adjust baking time according to the desired degree of baking. Let meat "rest" for about 10 minutes, transfer to a cutting board, cut into thin slices and serve.
Can be served with grilled vegetables or/and flavored rice.
