Ricinodendron heudelotii and Tetracarpidium conophorum are two non – conventional forests product in Cameroon. Kernels from both plants are usually used as soup thickener and snacks. In the aim to contribute to the valorization of underused endemic plants, protein isolates were prepared from defatted flours of Ricinodendron heudelotii and Tetracarpidium conophorum. Protein isolates were prepared from defatted flours by alkaline solubilization followed by isoelectric precipitation and lyophilization. Amino acid composition were evaluated. In vivo protein digestibility were measured using weanling male rats fed diet which were formulated to supply 10% protein using isolates, with casein as a control. Results indicated 81 and 91% of crude proteins respectively. In comparison with the FAO requirements for essential amino acids, these proteins isolates were limited in lysine, tryptophane and histidine. In vitro protein digestibility ranged from 95 and 96%. In vivo protein digestibility showed that there was a significant difference (p < 0.05) between the protein efficiency ratio, net protein ratio, true digestibility (TD) and net protein utilization (NPU) values of R. heudelotii and T. conophorum diets compared to casein diet. Corrected values of TD and NPU with amino acid score showed higher values with T. conophorum protein isolate.

Seed protein profiles of six grain legumes; blackeyed bean (Vigna unguiculata unguiculata), patisco (Vigna unguiculata), yardlong bean (Vigna unguiculata ssp sesquipedalis), red kidney bean (Phaseolus vulgaris), pigeon pea (Cajanus cajan) and velvet bean, (Mucuna pruriens) grown in Nigeria were electrophoretically investigated. The six species contained proteins in the range of 17-29 kDa. The average polymorphisms among the species were 0.00 %, 7.79 %, and 37.50 % in native-PAGE and SDS-PAGE in the absence of β- mecarptoethanol, native-PAGE in the presence of β-mecarptoethanol and SDS-PAGE in the presence of β-mecarptoethanol respectively. The species showed different similarity index and V. unguiculata ssp sesquipedalis and C. cajan had the highest (92.31 %) in native-PAGE while V. unguiculata and C. cajan had the highest (95.24 %) in SDS-PAGE. Cluster analysis using UPGMA procedure, showed phylogenetic relationships like that of V. unguiculata and P. vulgaris, V. unguiculata unguiculata and C. cajan which were in a good concordance with species classification based on morphological characters. A unique discrepancy was observed about Vigna species which were found in separate clusters exhibiting special banding patterns. Finally it appears that some polymeric proteins in the species maintained their genetic and phenotypic diversity while some monomeric proteins maintained their common genetic and phenotypic similarity.
