1lb Publix pizza dough at room temperature
1 whole tomato, sliced
1 egg (for egg wash)
1/2 cup salsa or tomato sauce
7 slices smoked provalone cheese
7 slices mozzarella cheese
1 garlic clove
2 TBSP butter
Preheat oven to 450
Slice your tomato and set aside.
Slice and dice your onion and set aside. Beat the egg in a small bowl and set aside. This is your egg wash.
Heat a small sauce pan on medium heat and melt butter.
Once butter is melted, add the garlic. (I press mine through a garlic press.) Then add the onions. Saute until the onion is yellow and the garlic has begun to brown.
Remove from heat and set aside.
Take the dough and cut in half. Set one half to the side...this will be used for the top of the pie.
Sprinkle a liberal amount of flour on a clean surface and roll the dough until you get it flat and round.
I always have a problem with this. It took me several times to get the dough the way I wanted it. It would tear and I would ball it up and start all over. What worked for me was actually placing the dough into the pie pan. I then used a small roller to get the shape I wanted. I would roll the roller back and fourth a few times, then turn the pan a quarter turn and do it again. I continued doing this until I got the dough to start running up the sides. If you know any tips when it comes to working with pizza dough, please let me know.
Once the bottom dough was ready, I added the slices of the smoked provolone cheese.
Next add the tomatoes and top with the onion and garlic.
Now, add the Turkey pepperoni. I always use turkey pepperoni whenever I make pizza. It is healthier for you and it does not have the grease that regular pepperoni has. You know how when you order a pizza, the pepperoni always has pools of grease in or around it? Turkey pepperoni does not do that. Plus...it tastes the same as regular pepperoni.
Now you want to add your salsa or tomato sauce. I used a pepper salsa from a local farm. It is sweet with a little bit of spice.
Now, top the pizza with the sliced mozzarella cheese.
Finally, roll out the other half of the dough until you get it flat and round. Then, cover the pizza pie with it. Take a knife and poke holes in the top to keep it from bubbling and brush with the egg.
Place in the oven and cook for 15 to 20 minutes, until the top is a nice golden brown.
