Apple Cherry Upside Down Cake

Here's all you need:

  1. ¾ cup unsalted butter (divided)
  2. 1/3 cup packed brown sugar
  3. 2 Fuji apples, peeled, cored, quartered and cut into slices
  4. 15 to 20 fresh Stemilt cherries, pitted and halved
  5. 1 cup all-purpose, unbleached flour
  6. ¾ teaspoon baking powder
  7. ¼ teaspoon baking soda
  8. ¼ teaspoon kosher salt
  9. 2/3 cup granulated sugar
  10. 1 egg
  11. ½ teaspoon pure vanilla extract
  12. 2/3 cup plain yogurt
  13. ¼ cup milk (2%)

Here's all you do:
  1. Preheat oven to 350*
  2. Melt {1/2 stick} butter and brown sugar in a large non-stick skillet
  3. Add apples, tossing to coat; cook 1 minute
  4. Add cherries; cook 1 additional minute; remove from heat
  5. In a 9" non-stick round baking pan, lay apple slices around outer edge, slightly over lapping each other
  6. Spoon cherries into middle of pan {inside circle created by apples}; cover with {no more than}1/3 C of syrup from pan.
  7. Combine flour, baking powder & soda and salt in a medium bowl; set aside
  8. In separate bowl, beat remaining stick of butter and sugar; beat in remaining ingredients until well combined
  9. Carefully pour batter over fruit, taking care not to disturb pattern
  10. Bake for 45-50 min, or until toothpick inserted in center comes out clean
  11. Allow cake to cool in pan for an hour; flip pan onto serving plate; let cake cool additional 5-10 minutes before removing pan.
  12. Serve warm
