Worlds Best Potato Salad

5 pounds Red Potatoes, cubed
6 chicken bouillon cubes
1 1/2 cups Mayo
1 tsp Dijon Mustard
4 Garlic Cloves, minced
4 hard boiled eggs, chopped (optional)
1 1/4 tsp Coarse Kosher Salt
1/2 tsp pepper
A handful of Parsley, chopped
In a large pot, add the potatoes and chicken bouillon cubes with enough water to cover the potatoes by 2".
Boil until fork tender.
While the potatoes are boiling, make the mayo mixture.
In a small bowl, mix together the mayonnaise, dijon mustard, garlic,eggs(optional)salt,pepper and parsley.
Put the potatoes in a large bowl and pour the mayo mixture into the potatoes and mix well.
You can make this the day before so all of the flavors can combine.
