CREAMY RANCH CHICKEN

1 pound boneless, skinless chicken breasts
1/2 onion, minced
4 small garlic cloves, minced
1 packet Hidden Valley Dry Ranch Dressing
8 ounce sour cream
1 block cream cheese,room temp
1 cup chicken stock
1/2 cup dry white wine
Salt and pepper
In a medium bowl, mix together Ranch mix, sour cream, cream cheese, chicken stock and wine until smooth, set aside
In an oven proof pot, add enough olive oil to coat the bottom of the pan.
Add onions and cook over medium heat until soft. Add garlic to the onion and cook for 2 minutes more.
Remove the onions and garlic and stir them into the cream mixture. Set aside
In the same skillet you cooked the onions, add more olive oil to coat pan.
Add salt and pepper to both sides of the chicken breasts.
Brown the chicken breasts over medium heat, about 3 minutes per side.
Pour the cream mixture over the chicken and bake uncovered for 40 minutes or until no longer pink
Serve over brown rice.
Feel free to use low or fat free sour cream and cream cheese.
