Dairy and Egg free Easter Bread

1 1/4C hot water
4 tsp yeast
3tsp sugar 

Let the above three ingredients proof (get foamy) for 10 minutes


5C flour (you may need to add up to 1 more cup)
4 TBSP oil
1/3 C sugar 

Then get out your larger measuring cup (at least 2 liquid cups) and scoop out the insided of 1 orange and 1 lemon into it and all the juice you can get out of it. and fill to the 1c line with warm rice milk (or water)

Mix and knead.

Let rise in a LARGE bowl in a warm spot for an hour.  Then punch down and shape into small buns. Let the buns rise about 30 minutes until doubled in size.
Bake at 350F for about 15 minutes. When the tops of the buns begin to brown they are done.

Let the buns cool and then ICE ICE BABY!
