Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
4 cups old-fashioned oats (not Quick oats)
1 1/2 cups chopped almonds
1 1/2 cups chipped pecans
1 cup unsweetened coconut flakes
3/4 cup packed dark brown sugar
2/3 cup canola oil
3/4 cup honey
1/4 cup maple syrup
1 1/2 tsp ground cinnamon
1 tsp salt
2 tsp vanilla
Combine oats, nuts, and coconut, mix well. In a small saucepan, combine brown sugar, oil, honey, syrup, cinnamon and salt. Heat 3-4 minutes over medium heat until sugar is dissolved. Removed from heat and add vanilla. Pour liquid mixture over oat mixture and stir well.
Transfer granola evenly between two pans. Bake at 350 degrees for 30 minutes or until crisp. Cool completely and break into bite sized pieces.
