Introduction:There is more to spinach than meets the eye! A green leafy vegetable, spinach contains iron, chlorophyll, and several other pigments. Basic column chromatography techniques to find and identify these accessory pigments in spinach. Hands-on experiment will show how pigments are extracted at different rates based on the polarity of the eluent used. Once extracted, the pigments are collected and analyzed to determine relative polarity.
