Bought this two rib rib eye on the bone from CitySuper the other day...roasted it for an hour and half...and what ensued was a tender, juicy piece of beef...yum... Here's how I did it: 1. cool the rib eye joint to room temperature 2. wipe off any excess water 3. sprinkle salt to all surfaces 4. preheat oven to 180C 5. heat a pan, add some oil 6. with the fat side down, pan fry the rib eye joint until it is caramelized on all sides (seals the surfaces and retains the moisture during roasting) 7. add a knob of butter during the pan frying step (add after 4 surfaces are sealed) 8. transfer the rib eye joint to a roasting tray 9. sprinkle pepper and more salt 10. roast in the oven for 1.5 hours or so 11. to see if it's done by inserting a knife into the joint, if it leaks bloody pink juices then it is done (medium rare) 12. take out the joint from the oven, rest the joint for 20 minutes while covered in foil 13. carve and serve!
