Wild Rice Pancakes from Hot Eats and Cool Reads

What you need:

3/4 cup cooked, cooled wild rice

2 cups all purpose flour

2 teaspoons baking powder

1 tablespoon sugar

3 eggs, slightly beaten

1 1/2 cups milk

6 tablespoons melted butter

1/2 teaspoon salt


Combine all ingredients in a mixing bowl. Fry on a hot, greased griddle until browned on both sides.
