Roasted Garlic Rosemary Chicken with Potatoes from Hot Eats and Cool Reads

What you need:
2 chicken leg quarters
5 medium sized red potatoes, washed and cut into bite sized chunks
2-3 tablespoons olive oil
5 cloves garlic, sliced
1 teaspoon dried rosemary
1 tablespoon lemon juice
salt and pepper, as desired

Directions:
Preheat oven to 375 degrees.

Place chicken and potatoes in a glass baking dish, sprinkle with salt and pepper. In a bowl, combine olive oil, garlic, rosemary and lemon juice. Drizzle olive oil mixture over potatoes and chicken. Rub the oil mixture onto chicken and stir the potatoes to coat.

Bake for 1 hour to 1 hour 15 minutes or until chicken is cooked through.
