Pumpkin Chip, Almond and Pecan Cookies from Hot Eats and Cool Reads

What you need:

3/4 cup granulated sugar

3/4 cup light brown sugar

1 cup butter, softened

1 teaspoon vanilla

2 large eggs

2 1/4 cups all purpose flour

1 teaspoon baking soda

1 cup chopped pecans and almonds

1 cup pumpkin chips


Directions:

Preheat oven to 375 degrees.


In a large bowl, cream together the sugars and butter with an electric mixer. Add the vanilla and eggs, mix until just combined. Mix in the flour and baking soda until combined. Then using a spoon, mix in the nuts and pumpkin chips until combined.


Line two cookie sheets with parchment paper. Using a cookie scooper, drop the dough onto the cookie sheets, about two inches apart. Bake for 11-12 minutes until edges are crispy. Remove from cookie sheet to a wire rack to cool. Store in an airtight container.
