Tane Koji

Finding a good source of koji spores seems to be fairly hard here in America, especially in the middle of Iowa.   Vision, Gem Cultures and Akita Konno from Will Auld's sake site are the only known viable sources of koji that I am aware of.  Akita spores grow koji specific to sake making.  Vision and Gem I think are soya koji.  They still can make sake, but you flavor mileage may vary.

It is possible to grow koji until it spores.  Keeping conditions clean and controlled, a supply of spores can be made.  It has been done by a few of us in the Northern Brewer forums, but decide yourself if this is what you would like to do.    Other items might be going to spore other than the koji, do so at your own risk.
