quick pickled beets

Makes as many as you can possible stand!!
I have a lot of beets. And thankfully, I've made them taste good enough for Hoag that he eats them like potato chips.  Here's my secret
Lets say we're going to use 3 beets..( this will fill up your common canning jar)
Thinly slice your beets( I use a mandolin) so they're flimsy. 
In a bag, jar or tupperware, add the beets
cover with equal parts balsamic and white vinegar
Add 2 Tbsp sugar
a pinch of salt
shake shake shake, shake shake shake, shake your pickled beets.  These will store up to 3 weeks!!
