Jicama, Cabbage and Cucumber Slaw

Cabbage, Jicama and Cucumber Slaw
serves 6 as a side dish

For the dressing, whisk together:
Zest of 1 lime
juice of 2 limes (1/4 cup plus 1 tbsp)
1 tbsp maple syrup
1/8 tsp Cayenne pepper
1/8 tsp sea salt
1/8 tsp ground pepper
For the slaw:
2 1/2 cups shredded cabbage
1 1/2 cups grated seedless cucumber
2 cups julienned jicama
1 cup thinly sliced red onion
1/4 cup fresh cilantro, minced

Toss all salad ingredients together in a large bowl. Pour dressing over vegetables and toss to coat. Let marinate 30 minutes before serving.
