Mom's Blue Ribbon Pie Crust

2 cups flour
2/3 cup shortening
2 T butter
1 egg yolk
5-7 T cold water

1.  Mix together the flour, shortening, and butter with a pastry cutter or fork until you have pea size pieces.
2.  Add in the egg yolk and 5 tablespoons of water and mix by hand.
3.  If crust is still dry and not holding together, add in the additional water.  Mix until the dough holds together but not overly wet.
4.  Form dough into a ball and cover with plastic wrap.  Put in refrigerator for an hour or overnight until well chilled.  It can also be frozen for a
later date.
5.  After well well chilled, cut dough in half.  Roll out half of the dough on a well floured surface until it is the size of the pie pan you are using.
6. Put the dough in your pie pan and fill with the filling of your choice.
7.  If using a top crust, roll out the other half of the dough in the same manner as the first.
8.  Cook according to your pie instructions.
