Green Tea Madeleines

Yields: 12 madeliences

Level: Easy

Total Time: + 3 hours chill time

 

Materials Needed:

-          1 large bowl

-          1 bowl with mixer attachment

-          1 Whisk

-          1 rubber spatula

-          saran wrap

-          1 cookie scoop (1 1/2 tablespoon)

-          oil spray

-          cooling rack

-          madeleine mold (w/ 12 cavities)

 

Ingredients:

§  2/3 cup all purpose flour

§  3/4 teaspoon baking powder

§  1/8 teaspoon salt

§  1/2 cup sugar

§  2 large eggs

§  2 teaspoons vanilla extract

§  6 tablespoons unsalted butter, melted and cooled

§  1 teaspoon green tea powder

 

Directions:

1.      Spray madeleine molds with oil, or butter and flour it. Set aside.

2.      In the large bowl, whisk the flour, baking powder, salt, and green tea powder.

3.      In bowl of your electric mixer, mix together the sugar and eggs until it becomes light colored and pale (it'll take about 2-3 minutes on medium high speed).

4.      Add the vanilla into bowl with the sugar and eggs. Mix.

5.      Using the rubber spatula, fold into the dry ingredients (flour, baking powder, etc).

6.      Mix in melted butter until combined.

7.      Using a cookie scoop, scoop batter evenly into molds.

8.      Cover the entire pan with saran wrap (wrap should touch the batter).

9.      Refrigerate the batter for at least 3 hours, for up to 2 days.

10.  Preheat your oven to 400°F when you're ready to bake.

11.  Bake for 7-10 minutes.

Remove the madelines and let them cool on a cooling rack.
