Cherry tomato corn salad

This is a great summer salad which goes with almost any open fire prepared meal, such as the ever popular smoked brisket, smoked pork butt or even your traditional hot dogs and hamburgers. It is VERY easy to prepare and tastes great chilled. One thing that tastes even better is if you grill a couple ears of corn and mix that in with some of your frozen corn. The seeding of the cucumber is strictly a personal preference, it is not necessary unless you have a very ripe cucumber with a heavily seeded core. The ratio of the corn, bell pepper, onion and cucumber is also personal preference, adjust it for your personal taste. 

     1/4 cup minced fresh basil
  • 3 tablespoons olive oil
  • 2 teaspoons lime juice
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups frozen corn, thawed
  • 3/4 cup diced onion
  • 3/4 cup diced green bell pepper
  • 2 cups cherry tomatoes, halved
  • 1 cup chopped seeded peeled cucumber
