Not Your Grandma's Pimento Cheese

8 oz Sharp Cheddar
2-4 oz Asiago, Romano, Parm or other nutty cheese
2-4 oz Smoked Gouda or Smokey Blue Cheese (less on this one) or Gjetost
6 oz jar chopped pimento or 1/2 of one fresh pimento pepper
1/3-1/2 c mayonnaise
1 tsp finely grated Vidalia onion
Black Pepper Fine
Optl: Jalapeno or other hot pepper to taste


Grate all of the cheese into a large bowl and add the pimento. If you're using fresh:

The best way to prepare a fresh pimento is to cap and seed it and drop large chunks into the food processor for a few minutes of pulsing. Now is also when you add a little hot pepper if you prefer. You can add the mayo directly to this or move it all to a large bowl with the grated cheese. Start with about 1/3 cup of mayo and adjust to your own taste from there. Grate or rasp the Vidalia onion in to taste and give it a good hard shake of pepper. I prefer a good brand of find ground pepper rather than fresh ground for this because I don't want to encounter a piece of pepper in a bite. Again, only the slight flavor of pepper throughout.
