1 Head Cauliflower
3-4 Laughing Cow Cheese Wedges, any flavor
1 qt Chicken Broth
Break cauliflower into smaller florets. Place over med-high heat with enough broth to just barely cover; add some water if necessary. When it comes to a boil, reduce heat to simmer and check in 10-15 minutes. Test with small paring knife - when knife slides into a floret with little resistance immediately remove from heat. Drain well and move cauliflower to food processor with cheese wedges. Process till smooth and season with salt and pepper or favorite seasoning. Keeps well in fridge for nearly a week.
