Marinated Spring Pea Salad

2 Cups Fresh Green Peas
3-5 Radishes, diced small
3-4 scallions (green onions), sliced thinly including about half the green part
1/4 cup oil
1/4 cup sugar
1/3 cup white wine vinegar
salt and pepper

Prepare the peas by quickly rinsing and steaming in the microwave. The remaining water from rinsing will be enough to create steam if you tightly cover with plastic wrap in a microwave safe bowl. Test them after 6-8 minutes to see if they're tender. I think they're best when they still have a slight firmness. (If it's not the season for fresh peas use a good brand of frozen, never canned!) Cool briefly and add the diced radishes and scallions.

Mix the oil, sugar, vinegar, and seasonings in a bottle and shake well until blended and the sugar has dissolved. It will look like far too much for this salad, but remember we're marinating and want the peas to be mostly covered by the dressing for at least 24 hours. Serve with a slotted spoon or drain off some of the dressing if preferred. This salad will keep close to a week in the fridge.
