Chocolate Chip and Candied Bacon Cookies with Pecans

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1-1/2 cups chocolate chips
  • 1 cup chopped nuts
  • 1 cup candied bacon (see additional recipe below)

PREHEAT oven to 375° F.

First make candied bacon. Spread 1 cup of brown sugar on a plate and press 5-6 slices bacon into sugar to coat both sides evenly. Bake on a well sprayed rack with pan underneath. Watch closely from 15 minutes on, though thicker bacon may take 30-40 minutes to thoroughly brown and crisp. Allow to cool completely, then break into pieces.

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips, bacon pieces, and nuts by hand with a sturdy wooden spoon. Drop by rounded tablespoonfuls onto ungreased baking sheets.

BAKE for 10 to 15 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
