Shrub Ingredients:1 cup Blackberries
1/2 cup sugar
1 Tbs balsamic
San Pellegrino or Club Soda
To make the shrub, mash together the berries and sugar until the sugar disappears into flowing juices. Add the balsamic and let sit at least an hour for sugar to dissolve and juice. A good brand of aged balsamic will add the finest flavor and sweetest. Alternately, try a specialty white balsamic such as lemon infused or even blackberry infused if you can find these at a specialty shop. Strain out the seeds if you like by pressing through a fine sieve. The shrub will keep for at least a month in the refrigerator.
To make the cocktail, spoon 1 Tbs of shrub mixture into the bottom of a stemmed champagne flute, add 2 oz or 2 jiggers of rum, light or dark. Top off glass with club soda or fizzy water. Garnish with a fresh blackberry or two.
