Squash Casserole-Gourmet Meals for Less (family recipe)




1 1/2 lbs. fresh yellow squash

1 medium yellow onion

2 tbs. butter


freshly ground pepper

1 small can red pimento, drained

1 cal sliced water chestnuts, drained

1 carrot, shredded

1 8 oz. container sour cream

1 can cream of mushroom soup

1 box chicken flavored box stuffing

1 stick of butter melted




Slice squash into approximately ¼ inch slices.  Peel, half and thinly slice onion.  In a large skillet combine squash onion, 2 tbs. of butter, ¼ cup water.  Cover and bring to a simmer.  Allow squash and onion to steam until tender, approximately 20 minutes. Preheat oven to 350°.  While squash is cooking.  Combine all other ingredients, reserving 1 cup of dry stuffing mix and butter, into a large mixing bowl and combine well.  Drain squash and onions and then add into mixing bowl.  Combine squash mixture into other ingredients.  Place mixture into a well greased serving dish.  Melt butter.  Sprinkle reserved cup of dry stuffing mix on top of casserole.  Drizzle melted butter over entire top of stuffing mix.  Bake uncovered for 1 hour.


Note: Can be made a day ahead.  Just reserve your 1-cup of stuffing mix in a bag and top with stuffing right before baking with stuffing and butter.  Allow dish to come to room temperature for 20 minutes before baking.  Bake as instructed above.
