Hungarian Goulash Beef Stew Crockpot

NOTE: 6-7 Hours total crockpot time

Ingredients:

  • 2 lbs round steak cut into 1/2 inch cubes. ¬†You can use the stew meat or any other type of steak you might have in your freezer/fridge.
  • 1 cup chopped onion
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 2 tablespoons coconut or cassava flour
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 2 tomatoes chopped
  • 1 bay leaf
  • 1 cup bone broth of choice

Instructions:

  1. Heat olive oil in a large skillet over medium high heat
  2. Add Steak and onion and saute until steak is browned
  3. Add garlic and saute 30 seconds more
  4. Remove from heat and place in Crockpot
  5. Combine flour, paprika, salt, pepper and thyme in small bowl
  6. Add flour mixture to steak and toss well
  7. Add tomatoes, broth and bay leaf and stir well
  8. Cover with led and cook on high for 1 hour
  9. Reduce to low-heat and cook 5 to 6 hours more.
  10. Enjoy over a bed of rice, spaghetti squash or zucchini noodles
