 Portuguese Soup


1 cup small, dry white pea beans

1 large onion, diced

1 lb. chouriço, thinly sliced

1 lb. fresh kale, finely chopped

1 tbsp. vinegar

2 quarts water

2 cups diced, new white potatoes


Soak the beans overnight in cold water. Combine the drained pea beans, onions, chouriço and kale in a kettle. Add the vinegar and water and bring to a boil. Reduce the heat and simmer for 2 or 3 hours. Add the potatoes and continue cooking until the potatoes are tender. Add more water if necessary.
