devilled eggs

6 large eggs--hard boiled
3 Tbs mayonnaise
1 rasher bacon--cooked and crumbled
2 Tbs finely grated sharp cheddar cheese
dash red wine vinegar
1 Tbs chives--finely chopped
salt and pepper to taste
paprika, sour cream, additional chopped chives (optional)

slice the boiled eggs in half and tip the yolks into a bowl.  mash with a fork.  toss in the bacon, cheese and chives.  add the mayonnaise and vinegar and stir to combine.  add salt and pepper to taste.  fill the egg white halves.  sprinkle tops with paprika, a dollop of sour cream or chives. cover with plastic wrap and refrigerate until ready to serve.
