2-4 tilapia filets, depending on size. I used three because my husband usually eats two and I'll just eat one.
1 blood orange, rind removed and sectioned
salt and pepper
1/2 c. white wine
1/8 c. orange juice
Season the fish lightly with salt and pepper. Heat 1 tbsp. of butter or oil in a large skillet over medium heat. When melted add the fish, seasoned side down. Sprinkle salt and pepper on the side now facing up. Cook for 2-3 minutes. Gently flip the fish. Pour in white wine and orange juice. Place the orange segments on top of the filets. Cook for another 2-3 minutes or until the fish is cooked through.
