Sweet and Sour Chicken Sandwich

Sweet and Sour Chicken Sandwich Recipe
Serves 2-4...depending on how hungry they are!

1 tbsp. vegetable oil
2 large chicken breasts, cooked and shredded
1/4 c. chopped onion
1/4 c. chopped green pepper
----> Saute above ingredients together over medium heat until onions and peppers have softened a bit.

1/2 c. sweet and sour sauce
----> Stir into chicken mixture. Heat through and set aside.

1 tbsp. vegetable oil
1/2 head of purple cabbage, sliced thin
----> Saute cabbage over medium heat for about 3 minutes. You just want to slightly wilt it.

1 tbsp. butter
1 tbsp. brown sugar
1/4 c. pecan pieces
----> In a small skillet, combine butter, brown sugar and pecan. Cook over medium-low heat until pecan is toasted. Remove from skillet and spread into a thin layer on wax paper. Sprinkle kosher salt lightly over the top.

Pile the chicken, cabbage and pecans onto a slice of bread (or bun). Top with another slice of bread and serve immediately.
