2-4 chicken breasts
salt and pepper
pinch of ground cayenne pepper
2 peaches, sliced
2 tbsp. butter
Drizzle chicken lightly with olive oil. Sprinkle on salt, pepper and a touch of cayenne pepper. Grill chicken for 8-12 minutes per side or until cooked through.
In a saucepan, combine butter and peaches. Cook over medium-low heat, stirring occasionally, until peaches are tender. Pour peaches over cooked chicken.
Serve and enjoy!
Optional Cooking Method: Forgo the grill and sear the chicken breasts in a hot skillet. After cooking the peaches and butter together, pour it over the chicken and bake at 375 for 20-30 minutes or until chicken is cooked through.
