*I like to cook this up while I'm making all the other OAMC meals so I have a quick protein source on hand to quickly make a meal (see suggestions below).
2 lb. beef roast
2 tsp. parsley
8 garlic cloves, peeled
2 cups water
Place all ingredients in a slow cooker. Cook on low for 6 hours or on high for 3-4 hours. Using forks, shred the beef. Allow to cool and divide into quart-sized freezer bags.
Cooking day: Thaw and use in french dip sandwiches, burritos, quesadillas, soups, taco salad, etc.
