1 box Toasted Pine Nut couscous, cooked according to package directions
1 zucchini, chopped
1 large tomato
1 scallion, minced
1/2 c. grated parmesan cheese
In a skillet, drizzle a bit of olive oil. Heat over medium heat. Add chopped zucchini to hot oil. Sprinkle with salt and pepper. Saute zucchini until it is fork tender.
Add zucchini, tomato and scallion to hot couscous. Stir to heat through. Remove from heat and stir in parmesan cheese. Serve warm or chilled. Enjoy!
