Mahi Mahi with Cilantro Tomato Sauce

1 roma tomato, chopped

1/3 c. fresh cilantro

1/4 c. parmesan cheese

2 tbsp. olive oil

 

2-4 mahi mahi filets

salt and pepper

 

In a food processor, pulse together the tomato, cilantro, parmesan cheese and olive oil. Add a touch of salt and pepper, to taste.

Season both sides of the fish filets with salt and pepper. In a large skillet, over medium-high heat, saute the filets in 1 tbsp. of vegetable oil. After 3-5 minutes, flip each filet. Cook for another 5 minutes.

Serve each filet with a spoonful of the cilantro tomato sauce over the top. Enjoy!
