Green Chili Burros

 
Serves 6-8

2.5 lb. beef roast meat 
1 tsp. cumin
1 tbsp. chili powder
salt
1 head of garlic, peeled 
8 oz. can tomato sauce
4 oz. can green chilis
8 tortillas
1 c. Colby cheese, grated

Optional garnishes:
Salsa
Cilantro
 

Cut beef into 1" cubes. Place meat in your crockpot along with cumin, chili powder, salt and garlic. Pour in tomato sauce and the entire contents of a can of green chilis. Stir to combine all ingredients and cover; cook on low for 5+ hours. Using a slotted spoon, retrieve the meat mixture, spoon it onto a tortilla - top with cheese, salsa and cilantro.

Serve and enjoy!
