2-3 lb. flat cut corned beef brisket
1 head of cabbage, quartered
In a large crockpot, place the beef brisket with the fatty side up. Sprinkle the seasoning packet over the top. Pour in enough water to cover the beef. Set your crockpot to "low," cover and let the brisket cook for 8-9 hours.
30 minutes before you're ready to eat, start a batch of mashed potatoes and prepare the cabbage head by slicing off the bottom and then quartering the remaining part. Remove the brisket from the crockpot, trim any access fat from the top, cover and set aside. Gently put the cabbage into your crockpot and cook it on low for about 20 minutes or until crisp-tender.
Serve the corned beef and cabbage up with a side of mashed potatoes and you've got a meal that would make any Irishman happy. :)
