Bruschetta

4-6 slices whole wheat artisan bread
1 bunch cherry tomatoes, rinsed
4 cloves garlic, peeled and smashed
1/8 c. freshly grated parmeasan cheese
olive oil
 
Preheat oven to 400.
 
In a baking dish, combine tomatoes and garlic. Lightly drizzle olive oil over the top and sprinkle with a pinch of salt and some black pepper. Place the baking dish in the oven for 8-12 minutes or until the tomatoes have burst.
 
Meanwhile, brush olive oil lightly over the sliced bread. Place on a baking sheet and pop them in the oven for 5-8 minutes or until golden brown; flipping halfway through. 
 
When the tomatoes have finished cooking, gently smoosh the garlic and tomatoes with a fork just enough to even the consistency. Stir in fresh parmeasan cheese.
 
Spoon the tomato mixture over the toasted bread and enjoy!
