1/2 pint heavy whipping cream
1 tsp. spanish vanilla extract
1/4 - 1/2 c. powdered sugar
1 pint blackberries
1 tbsp. granulated sugar
4 raw tortillas (Tortilla Land makes the best ones and are available at Costco and Walmart)
2 tbsp. butter, melted
2 tbsp. granulated sugar
1/2 tsp. cinnamon
In a large bowl, beat the cream until stiff peaks form. Then beat in vanilla and powdered sugar until just combined.
Combine blackberries and 1 tbsp. granulated sugar. Set aside. Brush butter over both sides of each tortilla. Combine remaining sugar and cinnamon together; sprinkle onto each tortilla.
In a skillet heated to medium heat, place the tortillas, one at a time. Allow the tortilla to toast up and get golden brown, flip and cook until golden brown again. While the tortillas are still warm, spoon a 1/4 of the blackberries into the center, roll up. Top with the whipped cream and enjoy!
