Asian persimmon cakes
Make 16 cakes
Prep Time 30 minutes-(after soaking Azuki Red Beans for 8 hours)
Azuki Red Bean Paste Infredients:
1 cup uncooked red beans (adzuki) (soak the beans for 8 hrs)
3 cups water
1/2 teaspoon salt
1/2 cup sugar
1 tablespoon vegetable shortening (crisco)
Persimmon Cake Dough
Ingredients:
1 1/2 cups all purpose flour also called (wheat flour)
1/4 teaspoon salt
1/2 cup purée persimmon (soft rip persimmons)
2 tablespoons sugar
Fresh Azuki Red Bean Paste
Azuki red Bean Paste is used in many Asian desserts.
Puree Cooked Azuki Red Beans into a smooth
paste.
Cooked Azuki Beans
Bring beams to boil then reduce heat. Simmer for 2 hours until soft.
Soaking Azuki Red Beams for 8 hours
Fresh Persimmon puree
Place Peeled and sliced Persimmons into a food processor.
