Triple Decker S'mores Bars

Graham Cracker Layer: 

2 sleeves graham crackers

3 tbsp sugar

1 stick butter

Crush graham cracker with food processor or blender into fine crumbs. Mix in sugar and melted butter. 

Pour into a buttered 9X13 baking dish. Press down with a measuring cup (or buttered hands). Bake @ 375 for 15 mins 

Let cool slightly while you make the fudge. 

Chocolate Fudge Layer:

1 pkg chocolate chips

1 can sweetened condensed milk

1 giant 7 oz hershey bar

1/4 c butter

Place everything in a microwave safe bowl, microwave until all is melted, pour on top of graham cracker layer, pat down with buttered hands, let cool in fridge for 2 hours. 

Marshmallow Top:

1/2 cup water

3 packages gelatin 

2/3 cup corn syrup

2 cups sugar

1/4 cup water

1/2 vanilla bean, scraped OR 2 tsp vanilla extract

Add water and gelatin in the bowl of an electric mixer. Don't stir. 

Add rest of ingredients (except vanilla) to a medium saucepan, bring to boil over med heat. Boil 1 minute, then pour into gelatin mixture. Beat for 12 mins on high speed with a whisk attachment. Add vanilla and stir to combine.

Pour over the chocolate layer, press down with buttered hands. Let set for a few hours, and cut into squares with a buttered knife.
