Beer and Bacon Chili

4 strips of bacon 

1 onion

1 jalapeno

2 cloves of garlic

1 red bell pepper

1 pound of ground beef

1 can of kidney beans

1 can of pinto beans

1 8oz can of tomato sauce

1 can of tomatoes and green chiles (Rotel) 

1/2 cup water

1 bottle of beer (whatever you prefer) 

1 tsp chili powder

1 tsp cumin

1/2 tsp chipotle chili powder

a few dashes hot sauce

salt and pepper to taste 

1/4 cup masa harina (corn flour)

garnishes of your choosing (cheese, jalapenos, extra bacon, sour cream, cilantro, etc) 

Start off chopping the bacon into 1/2 inch pieces. Fry in a large saucepan until it's crispy. While the bacon is frying, dice the onion, jalapeno and bell pepper. Mince the garlic. Take the bacon out of the pan, set aside, and add the diced vegetables and garlic. Salt and pepper to taste. Cook until translucent (about 5 minutes). Take out the vegetables, set aside. Brown the ground beef in the same pan. Salt and pepper to taste. Drain off the grease.  Add the vegetables back into the pan. Then add both cans of beans (drained and rinsed), the tomato sauce, and the tomatoes & green chiles (not drained). Add a big splash of beer and 1/2 a cup of water, and the spices (cumin, chili powder, chipotle powder, hot sauce salt & pepper) Then cover and simmer for 1 hour.   After it's finished simmering, taste and adjust the spices as necessary.  Add the bacon that you fried earlier. Mix the masa with 1/2 cup of beer or water (depending on how prevalent you want the beer flavor), and add to the chili to thicken. Bring to a boil, then serve with your chosen garnishes. Bon Appétit!
